Was in a mood to prep some food today. My wife requested some per-prepared meals as she’s working the swing shift this weekend which may have influenced that. This was all assembled with just what I had around the house. You don’t need to always plan ahead! You can always do a little prep.
**Recipes:**
**Pasta with Meatballs**
-Pasta
–2 packs of banza chickpea pasta boiled al-dente
-Sauce
–I had 6 bell pepper tops leftover and a red onion in the fridge. I diced these up and sauteed them in butter until soft
–I added some Rao’s tomato sauce which was already in the fridge and an extra can of Kirkland tomato sauce from the pantry. I gave it some samples from the spice-rack (black pepper, oregano, basil, salt to taste)
-Meatbol
–1 pack of impossible burger, around 1/3 of that volume in seasoned panko breadcrumbs, an amount of pepper (unknown), and a few dashes of this sriracha popcorn flavoring which had never been opened
–Mixed together until I could make little (2cm-1inch) meatballs. I toasted these up in the sauce pan after I transferred the sauce into the strained noodles. Once they were all toasty I sampled one and it was pretty good
-Cheese
–I used my food processor to grind up some cheddar and another salty white cheese from my cheese drawer which hadn’t gone bad yet
-I arranged all of this in the glass containers and stored it away for later
